The Wrong Pizza

We picked up some pizza the other day while out too late.  W.C. loves his pepperoni.  After his second piece he asked for another so I got it and a few minutes later heard “Mom, you gave me the wrong one!”  I asked what he was talking about since it was the same kind he just had and I got, “I wanted pepperoni.  You gave me one with little green beans.”  So, confused I got up to look at his pizza and he proceeds to tell me that it has little green beans on it, pointing the seasoning out.  After I stopped laughing I explained what it was and promised that I didn’t give him a pizza with little green beans.  Poor W.C. didn’t believe me so he picked at it for a while before he decided he wouldn’t eat it.  Just another moment of his will power and refusal to eat something because what it looks like, dinner time is eventful every night.

Dinner Time

Dinner has become a big pain in the ass for us.  Every night is a new test to see if my oldest is going to eat.  He is on this I have to spit my food out in a napkin because it’s yucky stage.  He says it’s going to make him sick.  I wish I had never said that to him now.  I tell him all the time he can’t have this or that because it will make him sick.  It truly will make him sick because it’s always something dairy that has milk in it.  He is lactose intolerant and will get sick if he has anything with milk in it.  When I say sick I mean sick.  He will vomit (if he has a lot), get gas, get diarrhea, and it will tear his skin on his butt up to the point it will be raw and oozy with blood.  Now that you are grossed out you know why I say it will make him sick.  So, we have this fight every night to get him to eat.  I can make something that I know he loves but he won’t eat it.  There are times where I know he has been stealing food, or had a late snack and that’s ok.  The rest of the time though I want to pull my hair out.  I made chicken the other night and he loves chicken but he didn’t like the kind I was making.  So, in an attempt to get him to eat that night I made one breast just for him with only salt and pepper.  It started out fine.  Then we made the mistake of saying it had salt and pepper on it and he spit it out.  He refused to eat anymore after that.  He is so hard headed and has will power like you wouldn’t believe.  If it’s not what he wants it’s not going to happen.  The kid wants two slices of bread with ketchup on them all the time.  I am to the point now that I am thinking of doing the whole Jessica Seinfeld thing.  She has this cook book that tells you how to puree all the things kids won’t eat and add them in to your dinner without them noticing.  I keep wondering if I do a puree and add it to the ketchup if he will really notice.  Then it wouldn’t be so bad for him.  I don’t know though I am hoping he will just grow out of it and start eating again.  In the mean time I want to scream because he doesn’t care if you take away this or that or make him go to bed.  He will fight the sleep and a few hours later come out wanting food.  When I tell him he can have his dinner or go to bed and wait for breakfast he says he is going to wait.  Now every morning he is starving but I have to argue for a few minutes with him to eat something other than bread and ketchup.  I have told him it’s not good for him and now he argues back “yes mommy, it’s good for me.”  I have noticed that he has been giving in easier in the morning but at lunch and dinner it’s the same thing.  He went to bed hungry tonight and we will go through it all again tomorrow.  I can only hope that this whole charade ends soon.

My Version of Manicotti

My husband’s favorite

 

1 package of boneless skinless chicken breasts

1 package of Monterey Jack and Colby Jack Cheese (2 cups)

1 can of spaghetti sauce a cheese flavored one (still red sauce)

½ package of manicotti shells (normally 7 shells)

Lemon juice

Lemon pepper seasoning

 

 

I take a package of chicken usually 3 breasts boneless and skinless and cut them into chunks, this all depends on if you have a food processor or a hand chopper for the size you cut it up into.  Because in the end you want the chicken to be in tiny pieces almost shredded like.  So once you have the chicken cut you boil it in a pan/skillet with some water, lemon juice and lemon pepper seasoning.  You want to have enough liquid in the pan that the bottom is covered and the chicken can cook and still have a little extra left so a few inches it should barely cover the top of the chicken.  Then you cook the chicken over medium heat until done.  While the chicken is cooking you also want to boil half a package which is one tray of Manicotti shells (the box I use has seven shells on one tray and has two trays to a box.)  Once the chicken is cooked you then want to chop it up finely weather it’s with the processor or a hand chopper you need it fine and to let it cool a little.  Then in a large bowl you add the chicken and a 2 cup package of Monterey and Colby Jack cheese and mix it well.  Once the shells are boiled you drain them and I usually leave them in the strainer under a small stream of cold water to keep them soft and to avoid sticking together, then you carefully stuff the shells with the chicken and cheese mixture and line them in a baking dish.  After all the shells are stuffed and in the dish you then cover them in spaghetti sauce I use a four cheese sauce and then bake them for about 20 minutes at 350 until the cheese is melted.   

I serve this with bread (Pillsbury French loaf) and it lasts for 2 nights in my house.  Let me know what you think.
